Aktiviti Antimikrob Selulosa Bakteria daripada Komagataeibacter xylinus menggunakan Minuman Manis Komersial Tamat Tempoh sebagai Punca Karbon

Selulosa bakteria (SB) adalah biopolimer yang penting kepada industri makanan kerana ciri uniknya seperti kapasiti pegangan air (WHC) dan kekuatan mekanikal tinggi. SB berpotensi untuk diinovasi dengan penambahan bahan pengawet bagi menyelesaikan masalah pencemaran oleh patogen. Strain Komagataeibacter xylinus mampu menghasilkan tinggi melalui proses fermentasi. Namun, ini melibatkan penggunaan substrat berkos Justeru, penyelidikan dijalankan daripada punca bernilai rendah minuman manis tamat tempoh menilai sifat antimikrob terhadap Salmonella Typhi. Fasa pertama kajian, faktor mempengaruhi penghasilan telah dikaji. Keputusan menunjukkan bahawa hari optimum pada ke-10 fermentasi sebanyak 122.06 g/l. Nilai pH menurun 5.82 0 3.95 setelah 12 Kepekatan sukrosa protein secara signifikan (p<0.05) sepanjang WHC 22.53 g air/g selulosa kadar penyerapan meningkat apabila masa rendaman meningkat. Ujian biodegradasi pula basah mengurai lebih pantas (95.85%) berbanding kering (68.1%) 8 analisis. Pada fasa kedua ditambahkan natrium benzoat kalium sorbat menggunakan (0.5, 3, 6 24 jam) kepekatan berbeza (25, 50, 100, 250, 500 1000 mg/mL) dalam keadaan kering. menyerap agen berjaya menghalang pertumbuhan S. zon perencatan terbesar (29 17.5 mm) (12 14 jam mg/mL masing-masing larutan sorbat. Kajian potensi dijadikan sebagai pembungkus aktif memanjangkan jangka hayat makanan.
